Interconnected to Jean Georges’ ABC Kitchen and tapas-inspired ABC Cocina, the latest addition to the ABC chain is “here to serve, inform and inspire a cultural shift towards plant-based intelligence.” ABCV explains that the food is not merely vegetarian, rather it has high vibrations which has the ability to transform a person’s emotional and mental state which is what makes it so unique. The ambience is made to invoke these vibrations through an open kitchen counter, bright lights, and simple white furniture which makes the restaurant seem natural and uninhibited. The restaurant embraces a new era in food where more people are avoiding animal-procured ingredients and instead shifting to foods that are plant-based and veggie-centric. Shown below is the Dosa (South Indian crepes made from rice and lentils) with yoghurt, avocado and sprouts. With only using organic ingredients in all of its dishes, ABCV promotes vegetarianism as fuelled by today’s Instagram clean-eating guru’s. From Avocado Lettuce Cups and Green Chickpea Hummus in the starters to Wild Mushroom Burdock Noodles and Custard Tofu in the main course, ABCV offers a wide range of delicious and healthy dishes. Shown below is the Roasted Cauliflower with turmeric-tahini and pistachios.
